Plus, if you frequently open the smoker lid or the lid is slightly opened, you will get the wrong temperature on your Masterbuilt.īesides remember, cold weather, bad airflow, smoking too many foods at a time, and changing smoker temperature settings frequently will also lead your Masterbuilt temperature to go up and down while cooking. When you notice your Masterbuilt smoker temperature is swinging, then be sure that the possible culprits are the bad thermostat, leakage on the smoker lid or door and anywhere in the smoker, dirty smoker, and heating element. If it comes loose from the burner element, it doesn’t allow enough heat to get to the chips. But we recommend you not to soak the wood as it is not heating the smoker enough.Īnother reason behind uneven heating is the chip tray of the smoker. Some of us soak the wood chips to let them not burn quickly. In this case, you can use quality wood chips or chunks like oak or hickory. Masterbuilt Electric Smoker doesn’t provide enough heat to cook the meat evenly for using improper fuel. You can get rid of this problem by turning the vent off a little bit. ![]() The possible reason behind overheating the MES of a digital electric smoker is- too much airflow coming from elsewhere. I Love this stuff. However, sometimes, some of us notice our Masterbuilt electric smoker temperature is too high and get above heat than normal like 275 or 295 degrees.Įven though, we set all of the dials as low as possible we can, in return, our meat smokes so fast. Don’t worry. If I had a bigger box I would have added a second temp controller with a meat probe. I am thinking of replacing my temp probe with a pt100 probe, they are more accurate. When the timer runs out it turns off the temp controller which in turn turns off the heating element. Total cost $75 including the case and misc hardware from my electronics part shop. Also if it is on and I have no heat this means my element has bit the dust. I also wired the red light from the SSR in the bottom, this tells me the relay is on and power is on to the heating element. (celsius is also a programmable option) then let it run. The temp PID has an auto-tune feature to calibrate itself and it is smart I just set the timer for 11 hours and the temp for 225 degrees F. ( this really helpsbecuase thier wire is soooo short You think they saved a penny). They pulled two sets of wire for me out of an old oven and they already had the connectors on them and they were a about a foot longer. I also updated the seriously obsolete power cable and the heater wire with heavier wire from my local appliance dealer. I bought the TEMP PID with a K temp probe and replaced Masterbuilts with mine. I trashed their power supply in the bottom of the box and installed my SSR (Solid state relay) activated by the PID temp controller. A PID Timer controller off of Ebay with a PID Temperature controller also with a solid state relay controlling the heating element. They did not inform me that a power supply was in the bottom of my smoker and now I had to replace the whole unit because they do not sell the parts. So my masterbuilt controller went to pot.
